Mermaid Cafe: Wakame Brule

-42- Mermaid Café: Wakame Brule
Rich and thick sauce with wakame in it, steamed in a rice bowl

Makes 4, 100mL rice bowls
2 eggs
300mL kombu and cutlet stock (see page 94)
½ tsp salt
1 tsp mirin
⅓ tsp soy sauce
2 (80g) pieces high quality chicken breast
½ tsp soy sauce
wakame sauce
50g wakame seaweed
150mL kombu and cutlet stock (see page 94)
1 tsp light soy sauce
½ tbsp potato starch

[How to Cook]
In a bowl, mix together egg, stock, salt, mirin, and soy sauce. Thinly slice the chicken and dress with soy sauce.
Place chicken and equally divided mixture from into four bowls. If bubbles rise to the surface, scoop them out with a spoon (A).
Cover bowls with aluminum foil and steam in a steaming container over boiling water for 15-20 minutes (B).
