Fruit: Sky Seafood Filling Accompaniment Course
Shrimp and scallop marinade
Serves 3-4
6 scallops (sashimi style)
10 shrimp (shell on)
1 grapefruit
1 stalk celery
½ (100g) purple onion
1 piece (10g) ginger
1 lime’s worth of juice
dash white pepper
½ tsp salt
olive oil (as desired)
[How to Cook]
① Boil the scallops 30 minutes. Then place into cold
water (A). Cut in half lengthwise. Boil the shrimp in the shells. While they
are still warm, remove the shells (B). If they are large, cut in half. Peel the
outside peel and thin inner skin off the grapefruit. Cut the celery diagonally
across the fibers. Slice the purple onion thinly. Slice the ginger.
② Put the scallops and shrimp in a bowl with lime
juice, salt and pepper. Mix. Mix in onion, celery and ginger. Add grapefruit
and refrigerate.
③ After mixing once more, place in a serving dish and
garnish with celery leaves. Add olive oil as desired.
